Kaju Curry(Cashewnuts Curry)

Kaju curry has always been my all time favorite. For the first time i tasted this dish in a famous restaurant in my home town . Since then i fell in love with it. Usually am not able to eat more than 2 Tbsp of any rich curry  but when it comes to Kaju curry, am never full.


The long and large size cashew nuts are good for this curry but any type of cashew will also do.
The recipe is extremely easy and simple in preparation. It is rich, creamy and awesome in taste. It will go very well with bread, nan, chapati or rice.

Cashew curry

Ingredients:

  • Cashew nuts- 1 cup(Roasted)
  • Onion- 2,Medium size, sliced
  • Green chillies
  • Oil- 1 Tbsp
  • Butter-2 Tbsp
  • Whole spices(bay leaf- 1, cloves-4, cardamom-2, cinnamom-1 stick)
  • Ginger Garlic paste- 1 Tsp
  • Salt as per taste
  • Tomato puree - 2 large tomato, Fresh puree
  • Garam masala powder- 1 Tsp
  • Kashmiri red chilli powder- 1 Tsp
  • Turmeric powder- 1 Tsp
  • Coriander powder- 1 Tsp
  • Fenugreek leaves( Kasuri methi)-1 Tbsp
  • Fresh cream- 1 Cup
  • Coriander leaves- chopped

Direction:
Step 1:(saute onions)
  • Heat 1 Tbsp of oil in a pan, add the onions, salt for onion and green chillies and saute until onion is more than translucent.
Step2:(Prepare the paste)
  • Once the onion is done turn off the heat and let it cool a little bit.
  • In a blender jar or mixer grinder jar add 1/2 cup of the cashewnuts. Also add the sauted onions and green chilli. Grind to form a fine paste.
Step3:(Final curry)
  • Heat 2 Tbsp of butter in the same pan in which we sauted onion. Add the whole spices mentioned, toss for 30 seconds and then add the ginger garlic paste. Fry until the raw smell is over.
  • Add the fresh tomato puree,salt and the mentioned spices. Fry until butter separates from the spices.
  • Now add the onion and cashew paste . saute for 2 minutes and add 100 ml of water. Let this come to simmer and let the paste thicken.
  • Now add the fresh cream and let it come to boil. Once done add the remaining cashewnuts. Mix well and turn off the heat.
  • Add a Tsp of butter on top and sprinkle some freshly chopped coriander leaves.
Your Kaju curry is ready to be served. Serve this yummy curry with Chapati, Nan, Parotha, Bread or Rice. Its a total yum yum recipe.

    1. Thanks dear, but its not soup, its a rich creamy gravy which is too thick to be called as soup.......its a curry.

  2. I have never made this curry but have used cashew, blended with spices for curries. Nevertheless its nice to discover new recipes Oh yes, for me its not tosai or and I will pass the bread to my other half. I need my rice for this delicious curry.

  10. That curry looks so creamy & delicious. This is very similar to my Paneer Butter Masala recipe to which I add cashews sometimes. Your curry is defenitely a rich tasty one.
